These are so good I almost guarantee you and/or your guests will eat so many you make yourselves sick.
Ingredients:
Fresh jalapenos (at least 3 per person… They will all be eaten, no matter how many you prepare.)
good quality bacon, 1 strip per jalapeno
creamed cheese
toothpicks
Step 1
Fire up the grill and soak all the toothpicks in a bowl of water so they don’t burn on the grill.
Step 2
Cut all the jalapeno peppers in half longways, like oyster shells, and scrape out all the seeds.
Step 3
Fill each half pepper with creamed cheese. Just enough to fill them more or less to the edge is plenty.
Step 4
Cut all the bacon in half shortways, so that the strips are half as long. Wrap each jalapeno half with a half strip of bacon and stick a soaked toothpick through the middle to keep the bacon in place.
Step 5
Put all the peppers on the grill with the creamed cheese side up. Put them in places other than over the center of all the coals so that the inside can get hot before the outside burns.
Step 6
Cook them with the lid on until the bacon looks well done and the bottoms of the peppers are slightly burned.
WARNING: These things taste GREAT! Try to eat them responsibly, remembering that your stomach can only handle so much bacon, cheese, and bacon and that jalapenos are just as hot on their way out as they are on their way in.
